• Bison Loin (Alberta), with capers, cornichons, onions
• Smoked tomato vinaigrette ( smoked tomatoes, worcestershire, tamarind, espelette)

Vichycoise (cold leek soup): Leeks, watercress, Kale, Chervil, Beef broth, Garlic, coriander, Fennel, Black pepper)

• Quail egg (with espelette)
• Frisee salad
• Cornichon
• Crostini (with butter, espelette, garlic, olive oil)
